Since summer is here, I think that we can all agree we’d like keep our meals on the light side, when it comes to eating meals, especially during the summer months. Here is another tasty meal idea that can be made that is so simple it’s easy, and quick to make. It also cuts down on our calorie intake and requires very little ingredients to make. You basically just take some sautéed pan fried sliced mushrooms, and season them with a dash of salt & pepper to taste, and sprinkle them with some creole seasoning, it gives them some tasty added flavor.  Place that on a slice of toasted bruschetta slices or a slice of toasted whole wheat bread. Then top off with some freshly diced tomatoes, sprinkle with some mozzarella cheese, and you now have a quick tasty light meal that can be made in minutes.

1 large tomato (diced or chopped)

1 package of sliced mushrooms

Tasty quick simple & easy Avocado and cucumber salad

This is another quick simple & easy salad you can make with an avocado, and some healthy dark green leaf lettuce, and a few thinly sliced cucumbers, place the avocado on top of the salad, season with salt and pepper, or a filing of your choice. You can drizzle some olive oil over the top of it if you’d like, or any low calorie salad dressing of choice. I simply used a parsley, and garlic filing I found at the local grocery, and placed it inside of the avocado. You can also just use a dash of lemon juice and garlic powder to taste.
